Chef Riccardo not only shared the story behind this recipe—originally made by the founder Emanuele’s mom—but also revealed that it’s a favorite among their customers. After tasting it, I could immediately see why. This dish captures everything I love about Italian food—simplicity, bold flavors, and the ability to create something incredible with just a handful of ingredients.

The perfect cozy dish!!! It may take a while to make the tortellini (which you can also make larger and save yourself some time…though the little ones are TOO cute 🥺), BUT I recommend just doing a big batch and freezing the leftovers so you’re set for a while.

Currently making this squash salad for dinner agai

Currently making this squash salad for dinner again…it’s SO good.

I spent my day focusing on getting myself organized and set up for this new year. I wrote out a bunch of goals across different categories for the year. One of them being the joy of spontaneous cooking. Cooking has and will always be my passion, but also making it a job (that requires a camera in front of you) can honestly sometimes suck a bit of the joy out of it.

However, it is in these fun exploratory ~ cooks such as the one in this video ~ where I discover new flavor combinations and techniques that I can apply to new recipes I’m developing and my cooking in general.

So here’s to practicing more of the art of spontaneity in 2025 😊

The tips and tricks to making the PERFECT steak every time 🥩🔥

Cooking a perfect steak is definitely a tall order, but with the proper technique it is a lot easier than you think.

Tips & tricks:

🔪 Start with a thick cut steak, especially if you like your steak medium rare. This will give you a buffer to ensure you don’t over cook the steak…steak cooks quicker than you think.

🔪 Season the steak generously with salt and pepper from high above — this will make sure you get an even coating of salt — and allow the steak to come to room temperature before cooking.

🔪Get your pan VERY HOT. Once the pan is hot, add a touch of neutral oil and then add the steak. You’re looking for a fast,hard sear to lock in the juices — NOT to cook it all the way though (depending on the thickness!) Start with the fat cap, then sear one side and after its golden brown, flip and immediately baste!

🔪 Add in aromatics (garlic, rosemary, thyme etc.) after flipping, along with butter as you baste. This will infuse a wonderful subtle flavor.

🔪Finish cooking the steak in the oven. I like it at 375 F, typically for around 5-7 minutes for a 2 inch steak. Once you reach an internal temp of 130 (for medium rare) pull it out and allow it REST! The allows the juices to set (instead of drain out) and brings the steak to the proper temp.

Fried calamari is more than just a dish—it’s a

Fried calamari is more than just a dish—it’s a piece of my family’s history. I’ve eaten it countless times, and every bite reminds me of summers spent with loved ones and my dad’s tales of Sardinia. Frying it in extra virgin olive oil takes the flavor to a whole new level while keeping the process simple. Pair it with marinara or aioli, and you’ve got a dish that’s comforting, nostalgic, and downright delicious.

I especially love this dish around the holidays. At my house we traditionally make this on Christmas Eve or day, frying it just as the guests arrive and serving it hot with a squeeze of lemon and some flakey salt.

Prime rib is the ultimate holiday roast, but it can be a little intimidating to get it just right. Don’t worry—I’ve got you covered with a foolproof method for a perfectly cooked, juicy, and flavorful roast every time.

Here are my key 🔑 tips for success:

🔪 Start by removing the bones. This makes slicing easier later on and still helps lock in flavor and moisture when trussed back together. You can ask your butcher to do this for you!

🔪 Dry brine your roast. Generously season your meat with kosher salt and pepper, and let it sit in the fridge for 1-2 days. This will give you a mouthwatering crust, almost like dry aging.

🔪 Citrus-Herb Rub. I use a flavorful rub of garlic, lemon & orange zest, Dijon mustard, rosemary, and butter. It really adds that WOW factor to your prime rib!

🔪 The Reverse Sear method is key. Slow-cook your roast at 250°F until it reaches 130°F (accounting for carry over cooking) for a perfect medium-rare. Then, rest the roast before blasting the oven to 550°F to get that crispy, golden exterior.

🔪 Don’t forget the sauce! Make a citrus horseradish sauce to complement the richness of the roast. It’s the perfect balance of tangy and spicy.

This method guarantees a beautiful, juicy prime rib with a flavorful crust, and it’s sure to impress everyone at your next holiday feast!

While roast meat is typically the main event of most holiday meals, I’d argue that the potatoes are equally important (after the pasta 🍝🤣.) And to me there is truly no better way to enjoy a potato that when it’s roasted to a beautiful crisp on the exterior with a nice soft center 🤤
