Fried calamari is more than just a dish—it’s a piece of my family’s history. I’ve eaten it countless times, and every bite reminds me of summers spent with loved ones and my dad’s tales of Sardinia. Frying it in extra virgin olive oil takes the flavor to a whole new level while keeping the process simple. Pair it with marinara or aioli, and you’ve got a dish that’s comforting, nostalgic, and downright delicious.

I especially love this dish around the holidays. At my house we traditionally make this on Christmas Eve or day, frying it just as the guests arrive and serving it hot with a squeeze of lemon and some flakey salt.

Prime rib is the ultimate holiday roast, but it can be a little intimidating to get it just right. Don’t worry—I’ve got you covered with a foolproof method for a perfectly cooked, juicy, and flavorful roast every time.

Here are my key 🔑 tips for success:

🔪 Start by removing the bones. This makes slicing easier later on and still helps lock in flavor and moisture when trussed back together. You can ask your butcher to do this for you!

🔪 Dry brine your roast. Generously season your meat with kosher salt and pepper, and let it sit in the fridge for 1-2 days. This will give you a mouthwatering crust, almost like dry aging.

While roast meat is typically the main event of most holiday meals, I’d argue that the potatoes are equally important (after the pasta 🍝🤣.) And to me there is truly no better way to enjoy a potato that when it’s roasted to a beautiful crisp on the exterior with a nice soft center 🤤

Cooking and cleaning seafood can be stressful but it doesn’t have to be. Here’s how to clean and cooking 5 common seafoods. 🦐

🔑 The most important part when cooking seafood is treating each fish individually to ensure it is cleaned properly and cooked to perfection.

Here’s the breakdown:

Clams: let them soak in a mixture of cold water and 2-3 tbsp kosher salt for 1-2 hours until they spit out any sand or debris. Give it one more rinse. Cook in a pan or pot. Sauté oil & aromatics, add in the clams and add liquid of choice (wine, clam juice or water.) Steam until open and remove as they open. Discard any that don’t open.

Mussels: give it a rinse and then use a rough sponge to brush off any debris or seaweed on the outside of the shell. Pull out any of the beards. Cook the same as clams.

Scallops: if still attached, remove the abductor muscle (located on the side of the scallop). Pat dry, season with salt and sear in a hot pan with butter or oil until deep golden brown, flip and remove after 30sec-1 min.

Shrimps: remove the head and shells of the shrimp. Run a small sharp knife along the back of the shrimp and use the tip of the knife to remove the vain (it will always be there, even if it’s clear and empty - remove it.) Sear the shrimp in a hot pan with oil and butter til golden on both sides, about 2-3 min total.

Squids: separate the top and the bottom part of the squid. Reach into the center and remove the plastic like quill. Starting by the flaps, dig in to begin removing the exterior layer of skin of the calamari to reveal a solid white surface. Remove the bulb of the tentacle and cut just above the legs. To cook, you either have to go fast or slow. Give it a quick sear in a hot pan until it goes from opaque to white and remove, or let it go low and slow.

Arancini are Italian rice balls that can be made and stuffed with an assortment of different things. In this festive version, I add @montchevre tangy and fresh plain goat cheese along with some parmigiano and lemon zest to make a light and creamy risotto (it’s so good you can stop there, but it gets better).

After chilling, the rice is formed in balls stuffed with mozzarella ~ for some cheese pull drama. And then dredged and fried for 5 minutes until golden. A final drizzle of hot honey perfectly pairs with the creamy freshness of the rice… Also, it’s optional, but dunking it in some hot honey marinara sauce brings it to the NEXT LEVEL!

This is one of the most memorable recipes that I learned during my time in culinary school. It’s simple to make, can be fully made in under an hour, and is very affordable!! Two long pork tenderloins cost me only $20 and can feed around 6-8 people….talk about a great deal.

Pork tenderloins are often overlooked by many, but when cooked properly they can stand up to even some of the most expensive roasts. It all comes down to cooking it properly!

Sunday dinner represents nostalgia, tradition, and family and is always synonymous with good food ~ specifically pasta ~ in my house. This week, I used Barilla Classic Oven Ready Lasagna to make an incredible dish that brings the whole family together!

Lasagna Alla Norma:

* 1 pack of Barilla Classic Oven Ready Lasagne
* 1 medium onion, finely diced
* 4 cloves garlic, minced
* 2 28oz cans of whole peeled tomatoes (or passata if not using a food mill)
* Olive oil
* Fresh basil
* Crushed red pepper chili flakes
* 2 cups milk
* 2 tbsp butter
* 2 tbsp flour
* Pinch nutmeg
* 2 large eggplants
* 1 block low-moisture mozzarella cheese, freshly grated

1. Make the Tomato Sauce: Sauté onion, garlic, chili flakes, and salt in olive oil until aromatic. Add tomatoes and basil, simmer on low for 30–45 minutes, stirring occasionally, until thickened.
2. Prepare the Béchamel Sauce: Heat milk in one pot. In another, melt butter, whisk in flour, and cook 2 minutes. Gradually whisk in warm milk until smooth. Cook on low for 15 minutes, season with salt and nutmeg, and cover to prevent a skin.
3. Cook the Eggplant: Slice eggplant lengthwise (½ inch thick), salt, and let sit 30 minutes to draw out moisture. Pat dry, then fry in batches until golden, or bake at 375°F for 10 minutes per side.
4. Assemble the Lasagna: In a 9x13-inch dish, layer pasta sheets, béchamel, basil, eggplant, sauce and cheese. Repeat for five layers, finishing with béchamel, basil, mozzarella, and eggplant on top.
5. Bake: Cover with foil and bake at 375°F for 25 minutes. Uncover and bake 5–7 minutes until edges brown. Let rest 15 minutes before serving.

It is the best time of the year, aka time to get out all of that festive decor...and ofc you can’t forget the chips & sips @pepsi It is my roommate/bestie and I’s first Christmas in our NYC apartment, so we wanted to make it extra special by creating a whole night out of it. We got a little caffeine Pepsi pick me up after work to power us through making our holiday vision board a reality.

Afterward, we put together a “girl dinner” spread with all of our favorites and then cozied up to watch a movie. This was one of my FAVORITE nights since we’ve been in the apartment, and I definitely recommend making your holiday set up into a cute little festive party.
