Apple Crumb Pie

Ingredients

For the Pie Dough

  • 1 cup all-purpose flour
  • pinch kosher salt
  • 1 teaspoon sugar
  • cup COLD salted butter cubed
  • ¼ cup cold water add 1–2 teaspoons more if needed

For the Apple Filling

  • –4 lbs apples mix of Honeycrisp, Granny Smith, Golden Delicious
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • Optional: ½ teaspoon Pumpkin Pie Spice
  • Pinch of kosher salt
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour or 1½ tablespoons cornstarch
  • 2 tablespoons salted butter cut into small pieces (for dotting)

For the Crumb Topping

  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • Pinch of kosher salt
  • ½ cup 1 stick COLD salted butter, cubed

Instructions

Make the Dough

  • Whisk flour, salt, and sugar.
  • Cut in cold salted butter until pea-sized pieces remain.
  • Add cold water and gently mix until dough comes together (don’t overwork).
  • Press into a disc, wrap, and chill at least 1 hour.

Make the Apple Filling

  • Peel and slice apples ¼ inch thick.
  • Toss with sugars, cinnamon, nutmeg, pumpkin spice (optional), salt, lemon juice, vanilla, and flour/cornstarch.
  • Rest 10 minutes.

Make the Crumb Topping

  • Mix flour, both sugars, cinnamon, and salt.
  • Add cold salted butter and crumble with fingers until sandy with some clumps.

Assemble the Pie

  • Roll dough into a 12-inch circle and place in a 9-inch pie dish.
  • Add the apple filling and dot with salted butter.
  • Cover with crumb topping.
  • Chill the assembled pie for 10–20 minutes.

Bake

  • Bake at 425°F for 20 minutes.
  • Reduce heat to 350°F and bake 35–45 minutes longer, until golden and bubbling.

Cool

  • Let cool at least 2 hours before slicing so the juices set.
