Chicken Caprese Grilled Cheese

- 2 thin chicken breasts or 1 large chicken breast, halved horizontally
- Salt and freshly ground black pepper to taste
- 4 slices sourdough bread
- 2 tablespoons softened butter plus more for the skillet
- ¼ cup mayonnaise
- 1 tablespoon basil pesto
- 1½ cups shredded low-moisture mozzarella
- 1 medium tomato thinly sliced
- 1 teaspoon water
Season the chicken with salt and pepper. Cook in a skillet over medium-high heat for 3 to 4 minutes per side, or until cooked through. Remove from the pan and let rest.
Mix the mayonnaise and pesto together in a small bowl.
Lightly salt the tomato slices.
Butter the outside of each slice of sourdough. Spread the pesto mayo on the inside of each slice.
Layer mozzarella, chicken, tomatoes, and more mozzarella between the slices of bread.
Melt a little butter in a skillet over medium heat. Cook the sandwich for 3 to 4 minutes per side until golden brown.
Add about 1 teaspoon of water to the edge of the pan, immediately cover with a lid, and steam for 30 to 60 seconds until the cheese is fully melted.
Let the sandwich rest for 1 minute before slicing and serving warm.
