  • 2 thin chicken breasts, or 1 large chicken breast, halved horizontally
  • Salt and freshly ground black pepper, to taste
  • 4 slices sourdough bread
  • 2 tablespoons softened butter, plus more for the skillet
  • ¼ cup mayonnaise
  • 1 tablespoon basil pesto
  • cups shredded low-moisture mozzarella
  • 1 medium tomato, thinly sliced
  • 1 teaspoon water
