Simple 3 Ingredient Mango Sorbet
All it takes to make this ultimate summer treat is frozen mango, lime juice and some agave. Best part is that comes together with only a few minutes of work and about 2 hours of freezing time (use store bought frozen mango and you'll do it in 5 minutes total!!)

- 2 ripe mangos (can use pre frozen as well) cubed
- 2 limes juiced
- 2 tbsp agave or honey
- Tajin & lime for serving optional
Cut the mangos. Make sure stem is on top, then cut vertically, ¼ inch away from the midline. Make the same cut on the other side. Cut the flesh in a grid like pattern without going through the mango skin. Use a large spoon to detach the flesh from the skin and scoop the cubes out. Transfer the mangos to a sheet tray and freeze for 1.5 - 2 hours. Place the empty skin on a dish and place in the freezer as well.
In a blender or food processor, combine the frozen mango, lime juice and agave. Blend until smooth, scraping down the sides as necessary (about 2 minutes.)
Take the mango skin out of the freezer and pour the mixture evenly among the skins. For more of a soft serve consistency serve right away, or place back in the freezer for 30 minutes to firm up. Optionally garnish with lime tajin and fresh lime juice.
