  3. Reduce the liquid Uncover and let the excess liquid cook off slightly so you’re left with mostly carrots and just a small amount of liquid.
  4. Blend gradually Transfer to a blender, starting with just a little of the cooking liquid, and blend until smooth. Add more liquid slowly as needed to reach a thick, mashed consistency.
  5. Adjust and finish Taste and adjust salt, then reheat gently if needed and finish with olive oil and herbs.

  • Start with less liquid in the blender, you can always add more but you can’t take it out
